Future Future began life as a plan for a low-key bento shop, until the owners found a 108-year-old former art gallery on the corner of Swan Street and spent fourteen months turning it into a 130-seat, two-storey izakaya. The team, Milieu Hospitality, pairs ex-Jacques Reymond front of house Stefanie Breschi with Frank Body co-founder Alex Boffa and Shannon Peach of Congress.

The menu's party trick is a matcha crepe okonomiyaki the size of a dinner plate, backed by house-made avocado tofu inspired by Tokyo tofu restaurant Sorano. Guests are welcomed with complimentary sweet potato crisps, herbal tea and sparkling cucumber water, and the Australian art on the walls is leased through Artbank, the federal government's art program.
